The time to think about what you are going to do with all your leftover turkey is almost upon us! I am a fan of turkey all year long, but especially during this season when it is really cheap. Stock up on turkey to save money on your meat budget. This soup is fabulous with turkey or you can substitute chicken. Dump everything in the crockpot and let it go all day long. Couldn't be easier or more yummy!

1 med. Onion, diced
3/4 C. diced Carrot
3/4 C. sliced Mushrooms (button or shitake)
2 Tbsp. diced Garlic
2 Tbsp. diced Fresh Ginger
5 C. Chicken Stock
2 Tbsp. Soy Sauce
1 C. uncooked Brown Rice (to substitute instant rice, add 1 c. instant rice 10 minutes before serving)
2 C. diced Turkey
2-3 Tsp. Sriracho *Optional
1 C. Bok Choy, sliced
Crispy Choy Mein Noodles for garnish
Add vegetables, ginger, chicken stock, soy sauce, rice, & turkey to slow cooker.
STEP - 2Cover and set on high for 4 hours.
STEP - 3When rice is cooked add bok choy.
STEP - 4Cook for 10-15 minutes more.
STEP - 5Serve with chow mein noodles for garnish. Enjoy!
