1/2 cup Cilantro, fresh
3 Curly kale, large leaves
1/4 head Green cabbage
1/2 cup Peanuts, roasted
3 Scallions
Condiments
1 tbsp Dijon mustard
1 tbsp Honey
Baking & Spices
1 pinch Black pepper, ground
Oils & Vinegars
1/2 cup Peanut oil, roasted
1 tbsp Rice vinegar
For the salad, remove the large center “vein” from the kale leaves. Pulse the leaves in a food processor until they are chopped fine, but not so much that they turn to mush.
STEP - 2Roughly chop the cabbage and place in the food processor. Pulse until chopped fine, again being careful not to overdo it.
STEP - 3Combine the cabbage and kale in a large bowl, then stir to combine. Add the cilantro, scallions, and peanuts, then stir again.
STEP - 4For the dressing, whisk peanut oil, rice vinegar, honey, mustard, and ground pepper until well combined. Drizzle over salad. Enjoy!
