Cheesy Bacon and Mushroom Potatoes

It's meat grilling season at our house! Once it hits 50? here in Michigan, I can be sure that all my boys (hubby included) will want to spend every possible moment outside and eating meat! (LOTS of meat!) I am determined to spice up my side dishes from the normal baked potato, rice, beans, or chips. I love a good challenge! Yesterday, I came up with this super easy and delicious side that whipped up fast while hubby grilled up some chicken thighs.

Cheesy Bacon and Mushroom Potatoes


5-6 Medium Potatoes - Diced

1 Large Onion - Diced

2 Cups Diced Mushrooms

4-5 Slices of Bacon

1 T. of Butter or Butter Substitute

2 Cups of Cheese (Mozzarella, Colby-Jack, Pepper Jack or favorite cheese)


    STEP - 1

    Boil potatoes until almost fork tender.

    STEP - 2

    Fry bacon in a large skillet until crispy. Remove bacon and set aside.

    STEP - 3

    Reserve 1 tablespoon of bacon grease. Sauté onions and mushrooms in tablespoon of leftover bacon grease.

    STEP - 4

    When mushroom and onions are starting to soften, add drained potatoes to the skillet.

    STEP - 5

    Continue softening mushrooms and onions and allowing potatoes to brown.

    STEP - 6

    Add salt, pepper, and butter.

    STEP - 7

    Dump skillet contents onto a tin foil lined baking pan.

    STEP - 8

    Sprinkle with cheeses and place in oven broiler until cheese is melted and beginning to brown.
