2 Tablespoons salted butter, or olive oil
1 teaspoon minced garlic, 2 cloves
1 cup long grain rice
15 ounce can chicken or vegetable broth
1 teaspoon lime zest, more if desired
2 Tablespoons freshly squeezed lime juice, 1 lime
3 Tablespoons chopped cilantro
1-2 teaspoons granulated sugar
Bring the water to a boil; stir the butter and rice into the water. Cover, reduce heat to low, and simmer until the rice is tender, about 20 minutes.
Stir in the remaining ingredients into the cooked rice just before serving.
