These delicious fries are the perfect guilt-free treat to go along with binge-watching your favorite tv shows or watching your kids by the pool. After dredging the eggplant into the breadcrumb mixture, cut them as thin or thick as you like, bake in the oven, and enjoy!
1 medium eggplant, cut into 1/4 inch thick ‘fries’
1/2 cup flour
2 eggs, lightly beaten
1 cup panko breadcrumbs
½ cup parmigiano reggiano (parmesan), grated
1 teaspoon italian seasoning
salt and pepper to taste
STEP - 1
Dredge the eggplant slices in flour, dip them in the egg and then into a mixture of the panko breadcrumbs, parmesan, thyme salt and pepper.
STEP - 2
Place the eggplant slices on a wire rack on a baking sheet and bake in a preheated 425F/220C oven until golden brown, about 7-10 minutes.
