Jamaican Style Curry Goat


2 lbs goat or leg of lamb cut into 1-2 inch pieces bone and all

1 teaspoon salt

1/2 teaspoon black pepper

1 medium onion sliced

3 cloves garlic crushed

1" piece of ginger chopped

3 sprigs thyme

2 tomato sliced

1/2 any hot pepper you like

4 whole scallion ( Green Onion)

1 teaspoon curry powder for seasoning the meat

2 tablespoon curry powder for cooking

1/2 teaspoon cumin powder

1/2 masala powder

1 sprig fresh thyme chopped stem and all

3 tablespoons chopped cilantro

1/2 teaspoon ketchup

3 tablespoon oil or bacon fat

3 1/4 cups water


    STEP - 1

    Have the butcher cut your goat or lamb into pieces while frozen as raw meat will not be as easy to process.
