Mango Chicken with Couscous

Mango Chicken with Couscous


About 2 cups of cooked couscous

1/2 cup of raw sliced almonds or whole almonds that have been roughly chopped.

3 scallions chopped (green parts only)

1 mango chopped into 1 inch cubes


1 large bone in chicken breast

1 tablespoon of Jamaican curry powder (or any mild curry powder)

1/2 teaspoon of onion powder

1/4 teaspoon of salt

1/4 teaspoon of pepper


1 lemon

½ cup of honey

1/3 cup of olive oil

½ tablespoon of Jamaican curry powder

1/4 teaspoon of salt


    STEP - 1

    Season chicken with ½ tablespoon of Jamaican curry powder, salt, pepper and a 1/2 teaspoon of onion powder.

    STEP - 2

    Rub the spices into the chicken.

    STEP - 3

    Squeeze out the lemon juice and add the curry, salt, honey and olive oil, then whisk.

    STEP - 4

    Peel and chop the mango into 1 inch cubes.

    STEP - 5

    Chop the scallions, green parts only.

    STEP - 6

    Roughly chop almonds.

    STEP - 7

    Roast chicken for 25-30 minutes at 400 degrees.

    Directions for couscous:

    STEP - 9

    Add in the correct amount of water or stock, a small tab of butter, and bring it up to a boil,

    STEP - 10

    Add the couscous, turn off the heat and cover.

    STEP - 11

    Add some mango and a few sprinkles of almonds.

    STEP - 12

    Slice chicken and layer it on top with a few drizzles of the dressing.

    STEP - 13

    Sprinkle scallions on top and enjoy!
